Apparently veggies are good for you

To me, gluten intolerance was always a farce

If I had a dollar for every time I've rolled my eyes at someone talking about food intolerances, I would be a rich woman. Apparently, a gluten and dairy intolerant, rich woman.
Organic food was for hippies, gluten free options for attention seekers and dairy substitutes for wankers. Vegetables in any meal were negotiable and anything green on my plate officially made the meal "healthy".

Diets have never been something I've followed and generally the more I've focused on eating healthy or watching caloric intake, the worse my food choices have become. Continuing this habit into my 30s was not the best idea. Anyone that denies that the body's ability to handle being treated like shit declines as you get older can tell that to my ass and oversized boobs.

Step by step guide on How to Become Gluten Intolerant

JP Sears gives a great rundown on this topic which includes being a whinging stereotypical douche. Click here.

Here's how I did it:
  • Justify eating KFC with the fact that your workout lasted more than an hour.
  • Instead of using the real whole food in your fridge to make a snack, walk to the dairy and buy chippies and ice cream.
  • Instead of using the real whole food in your fridge to make dinner, eat burgers, fish and chips, or pizza.
  • Top off Friday night drinks with popcorn and M&Ms for dinner.
  • Vow to make (rather than buy) your weekend lunches, and make macaroni cheese or pikelets smothered in butter and jam.
  • Start drinking coffee ladened with chai syrup.
  • Drink copious amounts of wine. Every Friday.
  • Spend your Sundays meal prepping lunches for the week only to throw them away and eat sushi or other takeaway food for lunch instead.
  • Have up and go for breakfast (I haven't done this for a long time, but it played a part in the lead up)
  • Don't have breakfast
  • Fool yourself that you lead a healthy lifestyle because you work in the fitness industry and wonder how you managed to put on 15kg overnight (actually over 18 months).
What this will cause:
  • Inflammation and leaky gut
  • Autoimmune responses to normal things such as gluten and dairy proteins now in the bloodstream, causing eczema, inflamed joints, repetitive injuries that wont heal, headaches and bloating.
  • Massive stress on the liver having to process excess sugar, processed fats, alcohol and caffeine alongside its usual detoxification roles.
  • Hormone imbalances because the liver can't do its job causing weight gain, mood swings and lethargy.
Sounds like fun aye?

I QUIT.

Basically I've had enough of scratching my hands raw, snapping at my friends and colleagues and feeling like shit from the moment I wake up to the moment I collapse back into the bed I've been dreaming of all day. I quit.
I quit treating my body like shit and I quit not looking after the most important person in my life.

Today, I caught up with my good friend, IronSam coach, and nutrition guru, Emma, and she talked me through everything I already knew but for some reason refused to put into practice. I have a BSc with Pharmacology and Biochemistry majors so I know how the body works, yet for some reason will still justify that french fries are a suitable staple vegetable. She helped me put this stuff back into perspective and understand why I was having breakdowns over nothing after being gluten and dairy free for just 3 days. She's set me up with some liver and gut healing tips as well as a 4 week elimination diet to clear my system out and let my poor body recover. That means no gluten, dairy, fructose, added sugar, caffeine or alcohol.

Don't worry I still eat meat.
